Life is changing for our family this week, my husband is starting school today. He is going to night school Monday through Wednesdays so we will be missing him in the evenings. This means I will be making food only for me in the evenings (+ the boys). Making my menu plan was hard this week.

The Menu:

Lunch:

Crab Frittata

  • Tuesday: Apple & Cheddar Frittata (Recipe coming soon!)
  • Wednesday: Lunch at Work Retreat
  • Thursday: Asian Plum Quinoa Salad with  Deli Meat Roll Ups 

Asian Quinoa

Dinners:

Jalapeno Popper Chicken in the Crock Pot

Pizza Stuffed Hamburgers

  • Sunday: Greek Yogurt + Ranch Dip Mix & Carrot Chips (taking the easy way out on church potluck)

Last Weeks Goals:

  • Call doctor and get in for a check
  • 3 days of exercise
  • Log calories everyday
  • Watch Weight Loss Guru Video every day off

This Weeks Goals:

  • Be patient with the boys
  • Do C25K 3 days this week
  • Log Calories
