Beet and Goat Cheese Open Face Sandwich_2

I love beets and I wanted to try making something from fresh beets this week. I have actually never seen fresh beets, I’ve always gotten them out of a can. I had to do some research on how to cook them, I found a lot of roasting, but I just don’t love turning on my oven for lunch.

But I did find a few different instructions on how to cook them in the microwave. Make sure you pick a deep dish to microwave them in, because as you can see the water tends to splatter.

Be careful while cutting your beets as you can see, everything turns pink with the juice. I actually laughed as I worked with them and saw my fingers turn a bright pink.

Beet & Goat Cheese Open Face Sandwich

Ingredients

  • 1 beet
  • 1 ounce goat cheese
  • 1 slice light bread I use Dave’s Killer Bread Light (65 calories)

Directions

  1. Rinse the beets and cut away all but an inch of the stalks.
  2. Place in a deep microwave-safe with an inch or so of water at the bottom
  3. Microwave for 2 to 4 minutes per beet
  4. Turn them over and microwave another 2 to 4 minutes
  5. If not done after 8 minutes cook 1 minute at a time
  6. Spread goat cheese on bread
  7. Place in toaster oven and toast
  8. Place beets over goat cheese and enjoy!
