Carrot Cake Protein Bites

Okay you know these are good when your kids start begging you to make more of those carrot cookies. I originally created this recipe for me to put into my bento boxes, but now the boys are addicted! I’m wondering if I could convince them to eat zucchini bread ones.

Carrot Cake Protein Bites

Ingredients

  • 3 ounces carrots
  • 2 scoops vanilla protein powder I use Designer Whey
  • 1 cup oats
  • 1 tablespoon no calorie sweetner
  • 1/4 cup oats for rolling
  • 2 tablespoons 1/3 less fat cream cheese
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Directions

  1. Add all ingredients into food processor
  2. Scoop out 12 balls and roll in 1/4 cup oats
  3. Set on wax paper and place in fridge to set
  4. After an hour you may need to reshape them a bit then place in a ziploc bag
