I’m loving mushrooms right now. They are so light and yummy. But also I’ve been reading about the health benefits of mushrooms. Though the nutrients vary a lot between the different kinds of mushrooms, you will find them full of vitamin B, iron and antioxidants. And don’t worry when you cook these little morsels you will not loose the nutritional value!

Swiss & Mushroom Frittata

Serves: 1

Ingredients

  • 1/2 cup white mushrooms
  • 1/2 clove garlic minced
  • 1 slice swiss cheese
  • 2 eggs
  • 1/2 teaspoon coconut oil or butter

Directions

  1. Preheat broiler, make sure shelf is in top slot
  2. Add coconut oil to hot pan and melt
  3. Add mushrooms and garlic to pan and cook for about 5 minutes
  4. While cooking the mushrooms mix eggs
  5. Pour egg mixture over mushrooms
  6. Cook for about 2-3 minutes or until egg starts to set
  7. Lay slice of swiss on top of the frittata place under broiler
  8. Broil till brown on top and cooked through, about 2-3 minutes
