Roasted Orange Sesame Asparagus

One of my favorite spring veggies is asparagus. I stalk the grocery store waiting for the price to drop so I can add it to our menu plans. It is fresh, green and even my veggie hating hubby will eat them.

I have seen other asparagus recipes with lemon, but I haven’t seen asparagus with oranges. Though a friend mentioned that her children love asparagus with oranges on top.

My mother in law had brought over oranges for the boys, but they really like mandarin oranges more than regular oranges. So I stole them for my recipe, I quickly sliced up the orange and started creating.

This would be a lovely dish to take to a potluck, it’s colorful and bright and healthy. I grabbed up one of my Handi Foil fall pans for the recipe. The orange pan looked fun with the bright green and orange colors and would been great to take to share.

I put the serving sizes on this recipe as 4 but I personally would cut this into 2 servings. We love asparagus in our house. Though even if you eat 2 servings of this dish you will still be under 100 calories!

Roasted Orange Sesame Asparagus

Serves: 4

Ingredients

  • 1/2 pound asparagus
  • 1/2 orange for juice and zest
  • 1/2 orange sliced
  • 1 teaspoon sesame oil
  • salt & pepper
  • 1 teaspoon sesame seeds (optional)

Directions

  1. Preheat oven to 350 degrees
  2. Snap woody ends of asparagus off
  3. Toss asparagus with juice and zest from 1/2 an orange and sesame oil
  4. Layer asparagus in pan and lay sliced oranges on top
  5. Bake for 15-20 minutes (you may need to adjust time if you have thicker or thinner asparagus)
