Cinnamon Pear Sweet Frittata

I’m trying out sweet frittatas again. Sweet frittatas are a bit of my own creation. If you like custard you will like sweet frittatas. They are a quick and easy sweet treat. You could serve them for breakfast, lunch or even a light dessert.

The Cinnamon Pear Sweet Frittata I served to my mother in law for lunch, wanting her opinion. She liked the sweet and eggy flavor of them. I find they are a nice option when I’m craving something sweet but don’t want too many calories and need some protein. These lovely sweet treats are less than 200 calories and usually have at least 12 grams of protein!

Cinnamon Pear Sweet Frittata

Serves: 1

Ingredients

  • 2 eggs
  • 1/2 pear sliced
  • 2 tablespoons milk I use 2%
  • 1 tablespoon no calorie sweetner
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon honey

Directions

  1. Preheat broiler, make sure shelf is in top slot
  2. Spray oven safe skillet with cooking spray or add oil (will add calories)
  3. Mix eggs, milk, tablespoon of sweetener, and cinnamon
  4. Pour egg mixture in pan and lay sliced pears on top
  5. Cook for about 2 minutes without stirring, the edges should start to become firm like an omelet
  6. Take pan and place on top rack in broiler
  7. Broil till brown on top and cooked through, about 1-2 minutes
  8. Serve with honey on top
