Ironically this recipe was inspired by a pin on Pinterest. But once I clicked the link the picture was not what I thought it was! I decided I needed to create a recipe for what I had imagined it was, because it sounded so yum! And was a pretty little snack!

A great addition to this recipe would be a cherry on top, but alas I have no cherries. But I may go buy some so I can try it out.

I do not add the ginger straight into the cottage cheese mixture because I serve this to my kids and they would not eat it with the ginger. If you don’t have kids or your kids are not as picky as mine add it to the mixture.

Pineapple & Cottage Cheese Yum!

Ingredients

  • pineapple rings
  • 1/4 cup lowfat cottage cheese
  • 1/4 cup low fat ricotta
  • dash ginger powder
  • 1 packet sweetner optional

Directions

  1. Mix cottage cheese (try not getting too much whey), ricotta and sweetner in bowl.
  2. Dab pineapple rings dry with a paper towel
  3. Place one ring on a plate and top with 1/2 the cottage cheese mixture smooth to edges
  4. Sprinkly ginger powder
  5. Place second ring on top of cottage cheese mixture
  6. Repeat for second serving & enjoy!
