Healthy-Broccoli-Salad

I was looking for a recipe to take to our Easter dinner potluck, but I wanted to take something healthy. It came to me that it would be very easy to make a healthy broccoli salad. Now this is my go to recipe for potlucks! Can’t wait to take it to our Memorial Day family potluck!

I went on a search where someone replaced the mayonnaise with greek yogurt. I was surprised to not find any great recipes. I was also surprised to find how the proportions of a broccoli salad vary greatly!

I quickly went about creating my own recipe. You may wonder why I call this a savory broccoli salad. Many of the recipes I read used sugar in the recipe, but I wanted to cut this out to save on the calories. If you really really like a sweet broccoli salad you can either add sugar or add a little stevia to the recipe.

Healthy Savory Broccoli Salad

Ingredients

  • 1 lbs broccoli florets fresh
  • 1/8 cup onion chopped very finely
  • 3 slice center cut bacon
  • 1/4 cup sunflower seeds
  • 3 oz plain greek yogurt
  • 2 tbps light mayonnaise
  • 1 tbps balsamic vinegar
  • 1/2 tbps lime juice
  • 1/2 tsp Worcestershire sauce

Directions

  1. Blanch broccoli (place in boiling water for 20 seconds) run under cool water to make sure it’s not hot
  2. Mix in small bowl yogurt, mayo, vinegar, lime juice, and Worcestershire sauce
  3. In large bowl add broccoli, onion, bacon, and sunflower seeds
  4. Pour sauce in and fold all ingredients together
  5. You can serve now or set in fridge for 12 or more hours to meld flavors together better.
