Healthy Zucchini “Lunchables”

Yes I know that pepper jack and blue cheese are two very odd cheeses to put together. I wanted to show you how with this recipe you could actually use any kind of meat or cheese.

What I love is that instead of 185 calories for 12 crackers you only have 18 calories for the zucchini chips!  Amazing!

Healthy Zucchini “Lunchables”

Ingredients

  • 1 cup zucchini sliced
  • 6 slices deli ham
  • 1 slice pepper jack cheese
  • 1 tablespoon blue cheese

Directions

  1. Slice cheese in 6 peices and slice ham slices in half
  2. Lay down a zucchini slice, add 1/2 a ham slice, add cheese of choice and place zucchini slice on top
