Breakfast for Dinner: Healthy Crepes!

What do you make for dinner when you have nothing left in the fridge or pantry? Breakfast for dinner of course!

I had some strawberries that needed to be eaten, I always have plain greek yogurt and eggs in my fridge now, and an apple my MIL brought over and didn’t get eaten. So it was time to make up some yummy easy, healthy crepes!

Crepes

Ingredients

  • 3/4 cup Flour
  • 3 eggs
  • 3/4 cup milk
  • 1 1/2 tablepoons butter
  • 1 packet sweetner I used truvia
  • cooking spray butter flavored

Directions

  • Blend all the ingredients in a blender or with a hand blender
  • Place in fridge and chill for at least an hour to let the bubbles settle down
  • Heat your pan on medium to medium high and spray with cooking spray
  • Once pan is hot pour about 1/8 of a cup of batter in center of pan and swirl to spread it thin
  • Cook on one side for 1 min then flip and cook for 30 seconds
  • Cool on cutting board or plate while you continue to make the rest
  • These store great either in a plastic bag in the fridge or even in the freezer

Healthy Strawberry & Chocolate Crepe Filling

Ingredients

  • 1/2 cup strawberries chopped
  • 4 oz plain greek yogurt
  • 1 tablespoon sugar free chocolate syrup
  • 1/2 tablespoon mini chocolate chips
  • 2 tablespoon fat free whipped cream

Directions

  • Mix the chocolate syrup in the greek yogurt (add more to taste if you want)
  • Pour mixture down middle of crepe
  • Sprinkle with a few chocolate chips and strawberries and wrap
  • Spray on whipped cream
  • Sprinkle with more chocolate chips and strawberries

Servings: 2 | Calories: 88 | Fat: 1 | Carbohydrate: 11 | Fiber: 1 | Protein: 10

Spiced Apple & Cottage Cheese Crepe Filling

Ingredients

  • 1/4 cup cottage cheese lowfat
  • 1/4 cup plain greek yogurt
  • 1 apple peeled & chopped
  • 1/4 cup water
  • 1/2 tablespoon cinnamon
  • 1/4 tablespoon ginger
  • 1 dash nutmeg
  • 1 packet sweetner I used truvia

Directions

  • Place water, spices, 1/2 the packet of sweetner and apples on stove on medium
  • Cook till soft, but not mushy
  • Mix greek yogurt, cottage cheese and second 1/2 packet of sweetner
  • Place cottage cheese mixture into crepe and top with a few apples and wrap
  • Add more apples on top of crepe

Servings:4 | Calories: 42 | Fat: 0 | Carbohydrate: 7 | Fiber: 1 | Protein: 4
