Mexican Frittata

Ingredients

  • 2 eggs
  • 1/4 cup shredded mexican cheese 2%
  • 1/4 cup left over taco meat
  • 1/4 cup shredded lettuce
  • 3 grape tomatoes
  • 1 tablespoon light sour cream

Directions

  1. Preheat broiler
  2. Mix 1/2 the cheese and taco meat into scrambled eggs
  3. Spray oven safe pan with cooking spray heat on medium heat
  4. Pour egg mixture in pan, cook about 1-2 minutes till starting to firm
  5. Sprinkle rest of cheese on top of egg
  6. Put into broiler for 2-3 minutes
  7. Put shredded lettuce, tomatoes and sour cream onto frittata
