Asian Chicken Salad

This is a wonderful high protein, low calorie salad filled with flavor! I wanted to make a chicken salad that wasn’t cream based but was oil based. My favorite oil is sesame oil as it has a great punch of flavor with just a tiny amount.

Asian Chicken Salad

Ingredients

  • 4 oz chicken breast
  • 5 baby carrots
  • 1 spring onion
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon lime juice
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame seeds

Directions

  1. Mix sesame oil, vinegar, soy sauce and lime juice and set aside to let flavors mingle.
  2. Chop chicken, carrots, and spring onion.
  3. Mix all ingredients and place on bread or mixed greens.
  4. Garnish with sesame seeds

    I did not make any changes to this recipe. Hubby and I thought it was great! Quick and easy and very filling. I used the packaged grilled chicken stips, which made it very quick to make. You get a whole days worth of veggies in a tasty salad! -
