Carrot Cake Oatmeal (with Quick Oats)

I’ve been craving baked items like cake and sweets. This Carrot Cake Oatmeal hit the spot. It was really like eating a piece of carrot cake for breakfast. As for my boys it was a split vote on who liked it. But strangely it was my picky eater who ate his all up!

This is a very thick oatmeal if you like your oatmeal a little more mushy and a little runnier just add more milk before cooking.

Carrot Cake Oatmeal (with Quick Oats)

Oatmeal:

  • 1 cup carrots grated
  • 1 cup quick oats
  • 1 cup milk non fat
  • 2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/2 teaspoon maple extract
  • 2 tablespoons brown sugar substitute*
Frosting:
  • 4 tablespoons cream cheese
  • 2 tablespoons plain greek yogurt
  • 1 teaspoon vanilla
  • 2 tablespoons brown sugar substitute

Directions

  1. Mix in bowl: carrots, quick oats, milk, cinnamon, ginger, maple extract and brown sugar substitute. (You can add more milk if you like your oatmeal runnier)
  2. Cook in microwave 2-4 minutes on high
  3. While oatmeal is cooking mix cream cheese, yogurt, vanilla, and brown sugar substitute till smooth
  4. Serve oatmeal with cream cheese “frosting” on top

    • I found it at Fred Meyer’s (I believe that means you can find it at Kroger also) it is “Zero Calorie Brown Baking Sweetner”. When I wrote this I thought it was equivalent to splenda but it’s not because it is calorie free.
