Bacon Egg Salad

Ingredients

  • 2 eggs hardboiled
  • 4 slices bacon precooked and chilled
  • 1 tablespoon light mayonnaise
  • 1 tablespoon plain greek yogurt (optional) (not in nutrition facts)
  • 1/4 teaspoon paprika
  • salt and pepper to taste

Directions

  1. Chop egg or mash with a fork
  2. Add mayonaise and plain greek yogurt
  3. Chop or cut up bacon add to egg
  4. Add paprika, salt and pepper
  5. Mix till smooth
  6. Optional add ins: dill weed, rosemary, celery, shredded carrots
  7. Serve on bread, in a tortilla, in a lettuce or cabbage wrap or with veggies to scoop.
