Avocado Chicken Salad
Ingredients
- 1/2 cup chicken shredded (4oz)
- 1/4 cup avocado cubed
- 1/4 cup black beans
- 2 tablespoons red onion diced
- 2 tablespoons diced celery
- 2 tablespoons plain greek yogurt
- 1/4 teaspoon cumin
Directions
- Add all ingredients together in a bowl
- Mix till smooth
- Serve on a bed of lettuce, a thin bun, whole wheat bread or in a wrap

Fabulous either as a main dish or a side dish. Also keeps well and flavors come out overnight. I have also added some finely diced jalepenos for additional heat and it was pretty good!
