Plants vs Zombies Healthy Dinner

Handi Foil sent me some great recyclable foil pans and sponsored me to create some great recipes for them and for you!

The zombies are coming!

Okay Zarek is absolutely addicted to this game. If you are playing it he will come running to watch. He can tell you about every plant and every zombie!

I thought this would be an awesome Halloween meal! And I tried making it a healthy option as the munchkins all go out to get bags of candy!

To make the lawn I used a whole wheat cornbread base dyed green. In the game the grass is checkered, so I did the same in my muffin tins.

I filled the first three muffin papers then added a bit more dye and filled the last three papers.

While the muffins cooked I started making my plants.

For the sunflowers I cut the petals out of cheddar cheese (see how below), placed a ritz cracker on top of that and made the faces with an olive. Slice the olive in 1/2, then in 1/4, and then 1/8 use one as a smile and cut one in half for the eyes.

For the Sunflowers I found a Star of David in my holiday cookie cutters, if you don’t have one you can hand cut the cheese.

Tall-Nuts are the bigger versions of Walnuts. I actually got these awesome chips from Things Should Taste Good. I instantly saw how they could become Walnuts. I used candy eyes “glued” on with cream cheese.

This is really not a Jalapeno, but it looks pretty close. This is a sweet pepper with candy eyes and I used a toothpick to place it into the muffin.

For the Peashooter I used an olive, tooth pick and two inner leaves from a stock of romaine lettuce. You could use any edible leaf that you may have. I wanted to use spinach, but all I had was romaine.

I think the plants turned out pretty good. Next was the Zombies! The Zombies are coming!

It took me a bit to decide how to do the zombies, that is when I decided to make this a whole meal! Mini Meatloaf Zombies!

As the meatloaves cooked I started making the decorations. For the eyes I sliced up a string cheese and used a straw to create the pupils. I also cut up little cheese squares for the Zombies teeth!

I created mouths in the zombies with with a spoon. You can either create a dent to put the teeth in or you can try and spoon out some of the meat. Don’t worry if the meatloaf cracks – it adds to it’s zombie-ness.

I added a cheese triangle for a cone on one of the zombies and they were all set.

Zarek loved them! The boys were begging me to eat them! Maybe you could even serve brains for dessert!

Plants vs Zombies Muffins

Serves: 6

Ingredients

  • 1/2 stick butter
  • 1 egg
  • 1/4 cup honey
  • 1/2 cup low fat buttermilk
  • 1/4 cup whole wheat flour
  • 1/4 cup all purpose flour
  • 1/2 cup cornmeal
  • 1/4 teaspoon salt
  • green food dye
  • Decorations

Directions

  1. Preheat oven to 375 degrees
  2. Place papers in muffin pan
  3. Melt butter in large microwavable bowl
  4. Stir in honey
  5. Quickly add eggs and beat until well blended
  6. In separate container or large measuring cup, combine buttermilk with baking soda and stir into mixture in bowl
  7. Add in 1/4 teaspoon green food dye
  8. Stir in cornmeal, flour, and salt until well blended and few lumps remain (try not mixing too much)
  9. Pour batter into 3 muffin papers
  10. Add in 1/4 teaspoon green food dye and mix as little as possible to blend
  11. Pour rest of batter into the last 3 muffin papers
  12. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean

Zombie Mini Meatloaves

Serves: 6

Ingredients

  • 1 pound extra lean ground beef
  • 1 egg
  • 1/4 cup panko or italian breadcrumbs
  • 1/4 teaspoon Italian Seasoning
  • 1/4 teaspoon salt

Directions

  1. Preheat oven to 375 degrees
  2. Mix all ingredients
  3. Split evenly into muffin tin
  4. Cook for 35 minutes
