<p>Still fighting the morning rush and trying to find some quick and easy breakfasts. That&#8217;s when I decided to play around and make mini protein pancakes! This recipe has no flour in it and is filled with natural protein. And guess who liked it!</p>

<p>Yep that&#8217;s right, Zane loved these little things!</p>
<p>Next time I may add some of my frozen berries, bananas or even a couple chocolate chips to make them even more fun.</p>
<p>You could make a large batch and then freeze these pancakes to just heat up on the mornings you are on a rush. They would also be great for a breakfast on the go too!</p>

<li>Mix all ingredients till smooth</li>
<li>If you want a smoother pancake blend in food processor or with hand blender</li>
<li>Heat pan on medium heat and spray with cooking spray</li>
<li>Cook on each side about a minute a side</li>
<li>Serve with fruit, yogurt, sugar free Torani syrup or low calorie syrup</li>

<h2>Happy Dr Seuss Day!</h2>
<p>Isn&#8217;t it just perfect that Dr Seuss Day landed on a Friday! Here we are on Frittata Friday and I made this frittata to use for a St Patrick post, but then realized it&#8217;s perfect for Dr Seuss Day.</p>
<p>I thought this might be a good way to try and sneak some greens into my boys. Zane didn&#8217;t like them &#8211; Zarek did, but don&#8217;t listen to Zane he doesn&#8217;t like kiwis because they are green.</p>
<p>I thought for fun I would interview Zane about Dr Seuss and Green Eggs and Ham since he is just starting to learn to read and is really getting into these books!</p>

<li>Sprinkle cheese on top</li>
<li>Broil till brown on top and cooked through, about 2-3 minutes</li>

<p>I got ham at an amazing price the other day $3.99 for a 3 pound black forest ham. I quickly grabbed up two because I knew I could chop it up for easy frittata use. I am hoping to make up some <a title="Mini Bacon &amp; Cheese Frittatas" href="http://PepperScraps.com/2012/11/mini-bacon-cheese-frittatas/">mini frittatas</a> this week for quick grab and go breakfasts.</p>
<p>As for the cheese in this frittata I quickly grabbed one of my hubby&#8217;s favorite cheese sticks and chopped it up. So if you want just a bit of cheese for a small recipe like this don&#8217;t be afraid to grab something like a cheese stick to use. Cheese sticks come in a few different flavors are easy to grab and chop up. Plus you don&#8217;t have to worry about using up a whole block of cheese really quick.</p>

This smoothie has a little surprise built into it. Don&#8217;t you want to know why this is a <em>Pink</em> Pina Colada Smoothie? Well there is no artificial dyes, I promise. Instead of making a traditional green smoothie I decided to use beet greens instead. What happens when you add beet greens to a smoothie? Everything turns pink!</p>

<p>I&#8217;ve seen people who freeze their smoothies in muffin tins or ice cube trays but I just couldn&#8217;t figure out why you would want to dirty your blender twice. For me the worse part is cleaning all the dishes so freezing and then re-blending doesn&#8217;t seem to save me anything actually it seems to add work.</p>
<p>So I wanted to share a new trick I learned for busy mornings. I found the perfect solution.</p>

<p>Freeze the smoothie in sandwich bags  and then the night before serving just toss them in the fridge to defrost slightly to pour in your glass the next morning. You can even pour them in into the glass by simply using scissors to snip a corner off the bag.</p>

<p>To try this out I made a large batch of the smoothie and then placed servings into sandwich bags. I do 1/2 servings for each of my boys as they don&#8217;t drink as much as I do of the smoothies. I marked what they were and wrote down the calories for me for my food journal. I tossed them in the freezer to freeze.</p>
<p>The night before one of the days I had to work I tossed the bags into the fridge to defrost.</p>

<p>It worked out great! The boys smoothies were not as icy as mine, but they didn&#8217;t care at all, they still slurped them down. Plus I didn&#8217;t have to worry about cleaning the blender that morning.</p>

<p>Today is just a very simple, simple frittata &#8211; a great example that you can use what you have in the fridge to create a great frittata. Sweet potatoes were on sale at a local store this week, so I decided to try them out in a frittata.</p>
<p>I have also recently just added something new to my diet, coconut oil. I had mentioned my research on why <a title="Healthy Peanut Butter Fudge" href="http://PepperScraps.com/2012/12/healthy-peanut-butter-fudge/">coconut oil is considered so good for you</a> even with the added calories. I&#8217;m considering switching all my cooking to using small amounts of coconut oil. I&#8217;m curious to see how it will work for me as I start working on my weight loss goals again.</p>

<ol class="instructions">
<li>Preheat broiler &amp; set rack in top slot</li>
<li>Place coconut oil in oven safe pan and melt</li>
<li>Saute sweet potatoes till tender, turning as needed</li>
<li>Mix eggs, parmesan cheese, and salt &amp; pepper</li>
<li>Pour over potatoes and cook for about 1 to 2 minutes till egg starts to set</li>
<li>Place into oven on top shelf and broil for 2-3 minutes or till brown on top</li>

<li class="ingredient ">1 cup <strong class="name">cabbage</strong> <em> chopped</em></li>
<li class="ingredient ">2 slices <strong class="name">center cut bacon</strong> <em> cooked</em></li>
<li class="ingredient "><strong class="name">salt &amp; pepper</strong></li>
<li class="ingredient ">2 tablespoons <strong class="name">cheese</strong> <em> low fat</em></li>
</ul>
<h3 class="instructions_heading">Directions</h3>
<ol class="instructions">
<li>Preheat broiler</li>
<li>Cook bacon till crisp in an oven safe pan put aside and let cool slightly</li>
<li>Place cabbage in pan, add salt and pepper to taste, and saute in bacon grease</li>
<li>Cut or crumble bacon back into pan</li>
<li>Saute cabbage for about 3 minutes</li>
<li>Pour eggs over cabbage a cook for about a minute or till egg starts to set</li>
<li>Sprinkle with cheese and place pan under broiler for about 3 minutes</li>
</ol>

<p>The little green tomatoes are not in my recipe, they were a special find. I was visiting with my neighbor by her little garden and I saw the kids were playing with green tomatoes. I picked one up as I was leaving. I knew I could do something fun with it. And it was great on my frittata pizza.</p>
<p>That is one fun thing about this recipe is that you can add anything to your pizza that you have in your fridge you want to use. Get creative try zucchini or grill some onions. You can even use your leftover taco meat from the night before.</p>

<li>Spread spaghetti sauce, sprinkle with 1/2 the cheese</li>
<li>Place pepperoni and sprinkle with rest of cheese</li>
<li>Place under broiler for 1 minute or till cheese is melted</li>

<p>I had never tried goat cheese until I started eating healthier. I don&#8217;t remember who introduced me to this healthy yummy cheese filled with flavor, but I have to say it is one of my favorites.</p>
<p>If you like a cheese that is full of flavor then you will like goat cheese. I have found that I like to buy the individually wrapped ounces from Trader Joe&#8217;s. The small 6 ounce logs tend to dry up on me as I don&#8217;t use it fast enough since I&#8217;m the only one in my house that likes goat cheese.</p>

<h3 class="instructions_heading">Directions</h3>
<ol class="instructions">
<li>Preheat broiler</li>
<li>Mix eggs &amp; dill together</li>
<li>Spray small oven safe pan with non-stick spray pour in eggs</li>
<li>Crumble goat cheese over eggs</li>
<li>Cook on stove till set &#8211; about 3-5 minutes</li>
<li>Place in broiler for 3-5 minutes or till top is browned and cooked through</li>

<p>We were having breakfast for dinner again, I love breakfast for dinner. But this evening I wasn&#8217;t feeling like having a lot of sweet. So I decided to go savory.</p>
<p>Hubby and I loved these. It would be a great way to have breakfast on the go. I would love trying to make them and then tossing them in the fridge to try zapping in the morning.</p>
<p>My boys liked pulling out the ingredients and eating them individually, but they don&#8217;t eat burritos or anything where the food is really mixed together.</p>

<p>I tried making my eggs nice and flat, but it didn&#8217;t seem to make a difference once rolled up.  Try both ways if you like and see what works for you.</p>

<li>Cook bacon and eggs, place aside.</li>
<li>Place crepe in pan sprinkle with cheese cover to let cheese melt</li>
<li>Pull off as soon as cheese is melted and add bacon and eggs and roll up tight</li>
<li>Continue till you have made all 4 crepes</li>
<li>Serve hot</li>
