<p>Hummus is hard for me, I love it but the protein and carb ratio is hard for me to eat it. I know it&#8217;s good carbs so every often I will have some. Then I had an epiphany why not add plain protein powder into the hummus and up the protein in this great snack.</p>

<p>I also just recently started using veggies to replace chips in my favorite dishes. You might remember the <a title="Baked Pepper Nachos" href="http://PepperScraps.com/2013/04/baked-pepper-nachos/">Baked Pepper Nachos</a> I made recently. So now I can have a great dip to eat with pepper &#8220;chips&#8221; or now I&#8217;m loving snow pea &#8220;chips&#8221;.<br />

<p>This is a very basic recipe, but you could really spice it up. You could add roasted red peppers, more garlic, more spices, or anything else to make your own version. This recipe would be great for a lunch, side dish, or just a snack!</p>

<li>Drain garbanzo beans, reserve liquid</li>
<li>Add garbanzo beans, tahini, lemon juice, garlic, salt, paprika and cumin into food processor</li>
<li>Process till smooth add some of the reserved garbanzo liquid if needed</li>
<li>Add protein powder and process till mixed in.</li>
<li>Optional Toppings: cucumber, olives, feta cheese (not calculated in nutrition)</li>

<p>Isn&#8217;t it amazing how different each kind of olive can taste? For this recipe you could use any olives you wanted or happened to have on hand. This frittata is full of flavor and has almost a pizza taste to it. Oh it would probably be amazing with a marinara dip and you have the extra calories for it!</p>

<p>I have to admit every so often I&#8217;m tempted by my boys Mac N Cheese. Something about that cheese and pasta brings back those childhood memories of comfort. But as you know I try to avoid pasta, it is one of the things you have to be very careful with a Lapband.</p>
<p>I was staring at my second half of a spaghetti squash sitting on my counter and had an epiphany. I realized with spaghetti squash I may not get that perfect little macaroni texture but I could get that ooey gooey cheesey yumminess with a cheese sauce on the squash.</p>
<p>One thing you have to do when you have made the choice to live a healthier lifestyle is find replacements for food that you love. But this does not mean that you have to give up flavor, actually you may find things that you will love even more than the original food. This recipe is a good example of this. When you try a real cheese sauce versus the packaged powdered you will never go back!</p>

<li>Place spaghetti squash in a bowl with about 2 inches of water on the bottom</li>
<li>Microwave 15 minutes</li>
<li>Add cottage cheese, plain greek yogurt, butter, and half the cheese into a sauce pan</li>
<li>Melt and if you want really smooth use a hand blender to smooth out cottage cheese</li>
<li>Toss cooked spaghetti squash with cheese sauce top with cheese and panko bread crumbs</li>
</ol>

<p>One of our families favorite recipes, before eating healthier, was baked nachos. But once you start counting calories and looking at carbs, you realize chips are really hard to fit into a low calorie diet.</p>
<p>So nachos have been one of those things that we gave up, until now!</p>
<p>I have been trying to figure out good substitutes for things we have eaten in the past or things I have been craving. Well I have been craving chips. I found out that you can eat a whole bell pepper for less than 50 calories and it fulfills that crunchy savory craving.</p>
<p>But then it came to me why couldn&#8217;t you use bell pepper for chips in recipes also. You could serve them with dip at parties or even make baked nachos!</p>

<li>Slice bell peppers into chip sized servings</li>
<li>Cook meat with taco seasoning</li>
<li>Layer peppers, taco meat, and cheese on a cookie sheet</li>
<li>Heat till cheese is melted about 5-10 minutes</li>
<li>Remove from oven and tops with tomatoes, yogurt, and black olives</li>

<p>Do you have some left over Corned Beef? Then toss it into a frittata! That&#8217;s the great versatility of a frittata you can take left overs from one meal and turn it into a completely different meal.</p>
<p>I use a recipe from <a title="Food.com" href="http://food.com" target="_blank">Food.com</a> for my <a title="Corned Beef &amp; Cabbage" href="http://www.food.com/recipe/crock-pot-corned-beef-and-cabbage-216455?scaleto=3&amp;mode=null&amp;st=true" target="_blank">Corned Beef and Cabbage</a>, of course I do alter a little bit. I do not put the potatoes in as I rarely eat potatoes and with the corned beef I have little room for the extra calories. I also just place the cabbage on top of the meat in the crock pot 1 hour before serving. One less dish to clean and the seasoning of the corned beef blends nicely into the cabbage.</p>
<p>You will notice that my frittata doesn&#8217;t have any cabbage &#8211; sadly my guests from St Patrick&#8217;s Day ate all my cabbage. Oh well it was really, really good. I don&#8217;t know if it would have made it to this meal anyways!</p>

<li>Preheat broiler, make sure shelf is in top slot</li>
<li>Spray oven safe skillet with olive oil cooking spray</li>
<li>Chop corned beef and cabbage very finely</li>
<li>Place in skillet and warm up</li>
<li>Pour egg mixture over corned beef</li>
<li>Cook for about 2-3 minutes or until egg starts to set</li>
<li>Take pan and place on top rack in broiler</li>
<li>Broil till brown on top and cooked through, about 2-3 minutes</li>

<p>I am strange one of my favorite seafood meats of all time is imitation crab (krab). I love it because the flavor is very light and easy to work with.</p>
<p>Krab Ceviche could make a great dip to take to a family gathering. Or if you wish you could add a spoonful on to sliced cucumbers and make a light and tasty appetizer. But for me I enjoyed it as a light flavorful lunch.</p>

<li>Chop crab meat</li>
<li>Mix crab, cilantro, onion, lime juice, salt &amp; pepper and tomatoes</li>
<li>Let sit in fridge covered for at least one hour</li>
<li>Arrange slices of cucumber on plate (serve on one plate as an appetizer or on seperate plates for a meal)</li>
<li>Top cucumber with crab meat</li>
</ol>

<p>I was on Facebook and this post popped up showing <a title="Healthy Fettucine Alfredo by Pinch of Yum" href="http://pinchofyum.com/healthy-fettucine-alfredo" target="_blank">Healthy Fettuccine Alfredo</a>. l I&#8217;ve been thinking about making a white sauce for spaghetti squash for while. I went to check out Lindsay&#8217;s post and I was intrigued by her idea of creating a white sauce with cauliflower being the base.</p>
<p>I thought about making her recipe and just trading out the pasta with spaghetti squash, but I ended up making a few more alterations to suit my diet. I needed to get some more protein in the recipe plus I made my recipe make fewer servings as I will probably be the only one eating this in my household.</p>
<p>This turned out amazing! I will have to try using cauliflower for some more sauces, the flavor was so slight I didn&#8217;t even notice it. My sauce turned out pretty garlicky, so I changed the name of my recipe, but I love garlic! I did have one follower on Facebook ask if you could taste the greek yogurt. Yes there is a bit of tang to it. If that bothers you can cut the greek yogurt back to 2 tablespoons and consider adding 2 tablespoons of heavy cream.</p>

<li>Cook Spaghetti Squash in microwave for 10 to 15 minutes</li>
<li>Bring broth to a boil</li>
<li>Add cauliflower to broth and cook till soft</li>
<li>In a skillet melt butter and add garlic saute for about a minute</li>
<li>Add garlic, butter, pepper and salt to cauliflower</li>
<li>Blend till smooth with hand blender or put in blender</li>
<li>Add plain greek yogurt and heat till warm</li>
<li>Toss sauce with spaghetti squash and serve with Parmesan on top if you wish</li>

<h2>Happy Dr Seuss Day!</h2>
<p>Isn&#8217;t it just perfect that Dr Seuss Day landed on a Friday! Here we are on Frittata Friday and I made this frittata to use for a St Patrick post, but then realized it&#8217;s perfect for Dr Seuss Day.</p>
<p>I thought this might be a good way to try and sneak some greens into my boys. Zane didn&#8217;t like them &#8211; Zarek did, but don&#8217;t listen to Zane he doesn&#8217;t like kiwis because they are green.</p>
<p>I thought for fun I would interview Zane about Dr Seuss and Green Eggs and Ham since he is just starting to learn to read and is really getting into these books!</p>

<li>Preheat broiler, make sure shelf is in top slot</li>
<li>Blend eggs, kale, and salt &amp; pepper together</li>
<li>Pour egg mixture into oven safe pan sprayed with cooking spray</li>
<li>Cook for about 2-3 minutes or until egg starts to set</li>
<li>Sprinkle cheese on top</li>
<li>Broil till brown on top and cooked through, about 2-3 minutes</li>

<p>I got ham at an amazing price the other day $3.99 for a 3 pound black forest ham. I quickly grabbed up two because I knew I could chop it up for easy frittata use. I am hoping to make up some <a title="Mini Bacon &amp; Cheese Frittatas" href="http://PepperScraps.com/2012/11/mini-bacon-cheese-frittatas/">mini frittatas</a> this week for quick grab and go breakfasts.</p>
<p>As for the cheese in this frittata I quickly grabbed one of my hubby&#8217;s favorite cheese sticks and chopped it up. So if you want just a bit of cheese for a small recipe like this don&#8217;t be afraid to grab something like a cheese stick to use. Cheese sticks come in a few different flavors are easy to grab and chop up. Plus you don&#8217;t have to worry about using up a whole block of cheese really quick.</p>
