Still fighting the morning rush and trying to find some quick and easy breakfasts. That’s when I decided to play around and make mini protein pancakes! This recipe has no flour in it and is filled with natural protein. And guess who liked it!

Yep that’s right, Zane loved these little things!

Next time I may add some of my frozen berries, bananas or even a couple chocolate chips to make them even more fun.

You could make a large batch and then freeze these pancakes to just heat up on the mornings you are on a rush. They would also be great for a breakfast on the go too!

I am strange one of my favorite seafood meats of all time is imitation crab (krab). I love it because the flavor is very light and easy to work with.

You could fill these little cups with all kinds of things to change up this little treat. Think about using them as mini taco salad shells or use them for finger salads. There are lots of fun ways to use these cups.

I was so excited I got to use my new silicone muffin pans to make these little yummies. I had been really wanting to get some silicone pans because egg is so hard to clean off metal pans! But I wanted to start making mini frittatas. These little beauties slipped right out of the pan!

If you don’t have cool silicone pans like these I would highly recommend you get some Handi Foil muffin tins! That way you have a no clean, quick and easy way to make this recipe.

Handi Foil also has some great little storage containers with lids that you can freeze these in to pull out and reheat later. The mini frittatas would be great for a holiday breakfast or a quick appetizer.

If you like the heat this is a fun and tasty side dish or a light lunch. This would be a great side with a simple main course like hot dogs, brats, or fried chicken and it will give the meal a whole new twist. I enjoyed this as a light lunch with a few deli meat roll ups.

I personally love Frank’s Red Hot Sauce. I am not a huge hot sauce person but there are two hot things I love – buffalo wings and wasabi. When it comes to buffalo wings I only like them saucy and bright red orange!

I was surprised to find that you could get that sauce comes in a bottle! And it’s low calorie with lots of flavor!

Crepes don’t have to be sweet and filled with fruit. Crepes are just as yummy with savory ingredients. If you are looking for a quick and easy snack for you or for your kids try these cheese roll ups. I love them more than tortillas because small tortillas are about 140 calories each and over 20 carbs whereas crepes are about 70 calories and only 9 carbs. Plus crepes are way easier to make than tortillas – well at least for me!

Cheese is a Great Snack

Cheese is a great option for a snack as it is high in protein, but you want to make sure that you use your food scale when measuring out servings. A serving of cheddar cheese is 1 ounce and is about 100 calories a 6 grams of protein. You can also choose 2% options also to lower your calories, but since I make these mainly for the boys I don’t stress about that too much. They move around enough to burn the calories!

Make Crepes Ahead of Time

I like to make a big batch crepes about once a week. You can store them in the fridge with wax paper between each crepe for 5 days or freeze them for up to 3 months! You can find my crepe recipe on my post about Breakfast for Dinner.

Let’s Make Them

I started with shredding my cheese, you can use pre-shredded cheese if you wish.

Then place the crepe on a pan sprayed with cooking spray and sprinkle the cheese on your crepe.

To help the melting process you can place a lid over your cheese.

Watch the bottom of your crepe closely and pull off as soon as the cheese is melted.

Quickly roll up and enjoy! My boys love these so much, Actually so much I couldn’t get a good picture of them eating them while the danced around in joy!
