This is a very quick and easy breakfast or lunch that is filled with healthy protein. You can make it with other vegetables that you have available or need to use up, but the asparagus is so yummy!

Easy Grilled Asparagus Frittata


  • 5-8 Stalks asparagus
  • eggs
  • 1/4 cup parmesan cheese
  • Cooking Spray olive oil
  • Salt & Pepper to taste


  • Preheat broiler, make sure shelf is in top slot
  • Spray oven safe skillet with olive oil cooking spray
  • Grill asparagus for 4 minutes or until turn bright green


  • While grilling asparagus mix eggs and parmesan cheese, salt and pepper to taste
  • Flatten asparagus in pan and pour egg mixture over


  • Cook for about 2-3 minutes or until egg starts to set
  • Take pan and place on top rack in broiler
  • Broil till brown on top and cooked through, about 2-3 minutes
