Easy Spicy Egg Salad

This is the fastest and easiest egg salad you will ever make! Really. This recipe has only 2 ingredients and they are both portion controlled so all you have to do is mix them together.

Week after week of grocery shopping I considered getting those prepackaged guacamole cups. I love buying things that are portion controlled already.

Portion control is one of the best skills I learned in my weight loss journey. But there are days that you don’t want to weigh items or pull out the measuring cups. On those days I can pull out some of my favorite items that are already portion controlled.

One day I finally bought the 100 calorie snack packs of guacamole and I was in love! They were perfect and I also realized I was really saving myself money buying them. As I tossed two brown avocados to make room for my 100 calorie packs.

Then came the day I realized I could make the fastest and easiest egg salad with the spicy guacamole packs. It had everything I needed right there, spices and creaminess, to make the perfect spicy avocado egg salad!

Easy Spicy Avocado Egg Salad

Serves: 1

Ingredients

  • 2 eggs hard boiled
  • 1 Spicy Guacamole snack pack 100 calories
  • pepper and salt to taste
  • 2 cups mixed baby greens

Directions

    1. Finely chop egg
    2. Mix egg, guacamole and salt & pepper
    3. Serve on top of bed of greens
