artichoke and cheddar frittata

It’s frittata friday again! I have to say this is one of my favorites. I loved how the artichoke heart texture mixed in so well with the eggs. I wish though that I had a more elegant cheese to use with the artichoke. But then again frittatas are all about using what you have on hand. And I have a lot of cheddar on hand.

Artichoke Frittata

Ingredients

  • 1/4 cup artichoke hearts in water
  • 1/4 cup shredded cheddar cheese
  • 2 eggs
  • salt and pepper to taste

Directions

  1. Preheat broiler, make sure shelf is in top slot
  2. Spray oven safe skillet with olive oil cooking spray
  3. Chop artichokes hearts finely
  4. Mix eggs, artichoke hearts, cheese (reserve a tablespoon to sprinkle on top), salt and pepper to taste
  5. Pour egg mixture
  6. Cook for about 2-3 minutes or until egg starts to set
  7. Take pan and place on top rack in broiler
  8. Broil till brown on top and cooked through, about 2 minutes
  9. Pull out and sprinkle with reserved cheese and broil for 1 more minute
