Do you always have extra taco meat leftover? We do especially since our boys prefer plain cheese quesadillas over anything with meat in it. Here is awesome quick and healthy lunch you can use some of you leftover meat in!

Mexican Frittata

Ingredients

  • 2 eggs
  • 1/4 cup shredded mexican cheese 2%
  • 1/4 cup left over taco meat
  • 1/4 cup shredded lettuce
  • 3 grape tomatoes
  • 1 tablespoon light sour cream

Directions

  1. Preheat broiler
  2. Mix 1/2 the cheese and taco meat into scrambled eggs
  3. Spray oven safe pan with cooking spray heat on medium heat
  4. Pour egg mixture in pan, cook about 1-2 minutes till starting to firm
  5. Sprinkle rest of cheese on top of egg
  6. Put into broiler for 2-3 minutes
  7. Put shredded lettuce, tomatoes and sour cream onto frittata
