Easy Meals of the Week and Meal Plan Apr 6

Meal planning has been hard the last few weeks. I lost all motivation this week. I stepped away and cleaned out the fridge and got motivated again. I have a few things to use up and looking through some recipes I haven’t made in a while kept me going.

I decided for lunches this week I will be doing lots of my favorite egg salad recipes.

I love sharing my meals of the week with my YouTube followers (you should become one) and I thought I should be sharing them with the Pepper Scraps readers as well! I’m still getting back into the habit of capturing my meals of the week, so this isn’t my best video. But I wanted to start getting back into the habit and wanted to start sharing.

Next Week’s Meal Plan

This week we have TJ doing finals, school conferences, Spring Break starts early and TJ’s birthday. Oh and did I mention St Patrick’s Day too! This week is packed full so we will see if I stick to the plan. We will see if I even make it to the store!!

Lunches:

Curried Egg Salad

Buffalo Egg Salad

Egg Salad Stuffed Mini Sweet Peppers

Dinners:

Asian Chicken and Broccoli Salad

  • Wednesday: Not Your Kid’s PB&J
  • Thursday: Spicy Edamame (Recipe Coming Soon)
  • Friday: English Muffin Pizzas (Recipe Coming Friday)
