My husband is anti cooked veggies, to the point I was about to tell him too bad you have to eat it. But then I soon learned if I made them spicy and made sure they were not over cooked he would actually enjoy eating them.  That’s when I decided to try making spicy broccoli.

Spicy Broccoli Bites

Ingredients
  • cooking spray
  • 4 cups broccoli florets
  • 1/2 tsp cumin
  • 1/2 tsp chili powder adjust to taste
  • 1/2 tsp table salt
  • 1/2 tsp black pepper

Directions

  1. Preheat oven to 400F. Coat a baking sheet with cooking spray.
  2. Place broccoli in a freezer bag and add cumin, chili powder, salt and pepper; toss well to coat.
  3. Spread broccoli on prepared baking sheet and bake until tender, but not mushy, stirring halfway through, about 20 minutes.

How do you like your veggies? Raw, spicy, slightly cooked, cooked to mush?
