<p>Last year I was making some banana bread but once I had everything made up I realized I had no bread pan. (FYI,this is a very me thing to do.) So I looked through my pans and found a muffin tin and that was the beginning of my muffin madness.</p>
<p>I now try and keep muffins in the house at all times. I have tried dozens of recipes and even have come up with some of my own. If you are a regular reader you may have seen some of my muffin baking. Today I&#8217;m going to share with you my 5 top favorite recipes at <a title="Food.com" href="http://food.com" target="_blank">Food.com</a>.</p>

<p>My son loves muffins as you may have read about <a title="Muffins" href="http://pepper.uniquehorn.net/?p=403" target="_self">here</a>. I wanted to make some pumpkin muffins but I couldn&#8217;t find a recipe I loved, so I decided to <a title="Pumpkin Chocolate Chip Muffins" href="http://www.recipezaar.com/Pumpkin-Chocolate-Chip-Muffins-3564">modify a recipe</a>. I only did a tweek here and there but I like that they are not messy and not an overly sugary treat.</p>
<h2><strong>Pumpkin Muffins<br />
</strong></h2>
<p><em>Makes 30 muffins</em></p>
<p>4 eggs<br />
2 cups sugar<br />
1 (16 ounce) can pumpkin<br />
1 teaspoon vanilla extract<br />
1 1/4 cups vegetable oil<br />
3 cups flour<br />
1 teaspoons baking soda<br />
1 teaspoons baking powder<br />
2 teaspoons cinnamon<br />
1 teaspoon salt</p>
<p><strong>Directions:</strong></p>
<ol>
<li>Preheat oven to 400F.</li>
<li>Mix in a large bowl all the dry ingredients.</li>
<li>In small bowl beat eggs, sugar, pumpkin, vanilla and oil until smooth</li>
<li>Add pumpkin mixture to to dry ingredients. Do not over mix should be lumpy.</li>
<li>Fill greased or paper-lined muffin cups 3/4 full.</li>
<li>Bake for 15-20 minutes.</li>
</ol>

<p>I think through the holiday season I am going to make sure I always have some muffins made up. As you can see my new obsession right now is muffins. I&#8217;m not much of a cook or baker but I&#8217;m trying to stretch myself and I have decided to do it one dish at a time. I&#8217;ve gotten really good at muffins and have found some great recipes along the way.</p>
<p><strong>Why did I start making muffins?</strong> I had some old bananas that had gone bad and as usual I was feeling guilty about it. So I was going to make banana bread. I got everything mixed up and realized I don&#8217;t have a bread pan, what was I thinking. But I had won a muffin pan set a few years ago and left over muffin cups from Zane birthday so I poured the batter into that. And that is how Zane started on his muffin addiction.</p>
<p><strong>Zane is the muffin prince!</strong> He loves muffins. He cannot get enough muffins. They can be any flavor or shape and he will eat them. We have even called non-muffin items, special muffins and he chomps them down, too. LOL</p>
<p><strong>Muffins are a great toddler treat.</strong> They work for me in a pinch when I need a quick breakfast or a quick snack. I have savor and healthy recipes to supplement into his diet when he is not wanting to eat healthy. And for a bonus <em>most</em> of the muffins I make for Zane are not super messy.</p>
<p><strong>How will muffins <a title="WFMW Survive the holiday" href="http://www.wearethatfamily.com/search/label/WFMW" target="_blank">Work for Me</a> this holiday?</strong></p>
<ul>
<li>Quick and easy snack/breakfast to grab as we rush out the door</li>
<li>I can get my toddler to eat something healthy when surrounded by sugar</li>
<li>Great last minute gift for a hostess, teacher or neighbor</li>
<li>Great treat to bring to a potluck</li>
</ul>
<p>The one recipe my husband requests the most is <a title="Put the Lime in the Coconut Muffins" href="http://www.recipezaar.com/Put-the-Lime-in-the-Coconut-Muffins-125662" target="_blank">Put the Lime in the Coconut Muffins</a>. I found it when I wanted to use up a bag of coconut in my pantry. These are the best even though they are a little messy, mmm, toasted coconut everywhere. And they are great when you are looking for something out of the ordinary when you get tired of holiday food.</p>

<p><span style="color: #ff979e;"><strong>1. Do you have any cultural or religious naming traditions?</strong></span></p>
<p>No, the only thing that I really wanted was unique names for the boys. I didn&#8217;t want them to have a name that was so common that there would be three other boys in their classrooms with the same name. When you have a unique name like my own then you don&#8217;t name your children Jack and John.</p>
<p><span style="color: #ff979e;"><strong>2. Did you or your partner come to the marriage with pre-selected names?</strong></span></p>
<p>Not really. We had somewhat discussed using TJ&#8217;s father&#8217;s name as a middle name, but beyond that we didn&#8217;t have any names.</p>
<p><span style="color: #ff979e;"><strong>3. Did you consider the sound of the first and middle and last names together?</strong> <strong>Did this make any sad eliminations?</strong></span></p>
<p>Yes, I liked a lot of names that ended with -sen and -son but because our last name ends with -son they rhymed. I&#8217;m very particular about how the names sounded together. And rhyming is just weird. I was also very particular about nicknames. I wanted to try and think of nicknames for the names we came up with because TJ&#8217;s family has a strange habit of nicknaming the kids.</p>
<p><span style="color: #ff979e;"><strong>4. Did you have veto powers?</strong></span></p>
<p>Yes and so did he.</p>
<p><span style="color: #ff979e;"><strong>5. Did the baby naming cause arguments?</strong></span></p>
<p>No real arguments but we had real troubles coming up with a name that we <em>both</em> liked. We would just keep eliminating names the other liked.</p>
<p><span style="color: #ff979e;"><strong>6. Do you think it is easier to name boys or girls?</strong></span></p>
<p>It is way easier to name girls than boys.  We had a girls name right away before we found out Zane was a boy and still liked it for Zarek if he had been a girl.</p>
<p>Plus right now boy names are turning into girl names, like Rowan, Aidan, and so on.  We tried really hard to find names that were definitely masculine.  That was hard while trying to find unique names, but I think we did it.</p>
<p><span style="color: #ff979e;"><strong>7. Did you eliminate names because of people from your past or present who you don’t like or because a certain image comes to mind.</strong></span></p>
<p>I think there were a few names that we eliminated because one of us knew of someone with that name and it brought up negative thoughts. My husband was really good at pointing out fictional characters with the same name. And usually it wasn&#8217;t a positive character reference. <img src='http://PepperScraps.com/wp-includes/images/smilies/icon_razz.gif' alt=':-P' class='wp-smiley' />  And one of our sons does have a name of a bad guy of a show that we watched but we liked the name before we realized the reference. LOL</p>
<p><span style="color: #ff979e;"><strong>8. Did you / would you survey your children to get their thoughts on the name?</strong></span></p>
<p>At one point I did play with Zane to see if he could say the names that we were leaning towards for Zarek. But he was still pretty young and had no idea what we were talking about.</p>
<p><span style="color: #ff979e;"><strong>9. Did you tell people the name or possible names before the baby was born or were they “in the vault”?</strong></span></p>
<p>We told people some of our ideas. Zane we didn&#8217;t decide until a week before he was born, which he was two weeks late. <img src='http://PepperScraps.com/wp-includes/images/smilies/icon_smile.gif' alt=':-)' class='wp-smiley' />  But we were having so many troubles agreeing with a name for Zarek that we didn&#8217;t pick one out until we were at the hospital. I was really set on a name when we got there but when I saw him we both agreed it didn&#8217;t fit.</p>
<p><span style="color: #ff979e;"><strong>10. Did you use baby name books?</strong></span></p>
<p>Yes, somewhat. I have one book that I bought a long time ago when I used to write fiction. I used online websites the most though it&#8217;s so much easier to search names on a site then in a book.</p>
