Healthy Baked Macaroni & Cheese Bites

I’ve been craving macaroni and cheese, yes it’s terrible for you, but I had to have it. I decided let’s try and make a healthier, high protein version of this treat. I also wanted to make it easier to portion control so I chose to make  them in a mini muffin tin.

Tip: Do not use paper cups like I did, it was a total fail! The macaroni stuck to the cups and made it hard to eat. It’s cute though isn’t it?

Healthy Baked Macaroni & Cheese Bites

Ingredients

  • 1 box macaroni and cheese
  • 1/2 cup cottage cheese low fat
  • 1/4 cup plain greek yogurt
  • 1/4 cup sharp cheddar cheese
  • 1/4 cup tomato chopped (optional)

Directions

  1. Preheat broiler and place rack on top slot
  2. Follow directions on the box for cooking macaroni noodles
  3. Add cottage cheese, yogurt, and cheese packet to noodles and mix
  4. Spoon 1 cup of noodles into 6 cups at a time ( you may have some left over or have to do a small second batch)
  5. Sprinkle cheese on top and tomatoes if you wish
  6. Place on top rack and cook for 3-5 minutes or till tops get crispy

It IS cute! That is great that you are trying to make mac and cheese healthier :) They have this whole grain pasta on the market now that tastes good… And, I think the tomatoes were a good addition!
