Bacon Egg Salad
Ingredients
- 2 eggs hardboiled
- 4 slices bacon precooked and chilled
- 1 tablespoon light mayonnaise
- 1 tablespoon plain greek yogurt (optional) (not in nutrition facts)
- 1/4 teaspoon paprika
- salt and pepper to taste
Directions
- Chop egg or mash with a fork
- Add mayonaise and plain greek yogurt
- Chop or cut up bacon add to egg
- Add paprika, salt and pepper
- Mix till smooth
- Optional add ins: dill weed, rosemary, celery, shredded carrots
- Serve on bread, in a tortilla, in a lettuce or cabbage wrap or with veggies to scoop.

You did great! I like how you talked about the salt and pepper shakers and gave suggestions for what to serve it with! I love egg salad, why have I never had it with bacon?!?! I will definitely be trying this out soon!

I made this after Easter to use up Easter Eggs. I’m not really an Egg Salad Fan, but I loved this version.
