This is a wonderful high protein, low calorie salad filled with flavor! I wanted to make a chicken salad that wasn’t cream based but was oil based. My favorite oil is sesame oil as it has a great punch of flavor with just a tiny amount.
Asian Chicken Salad
Ingredients
- 4 oz chicken breast
- 5 baby carrots
- 1 spring onion
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- 1 teaspoon lime juice
- 1 teaspoon soy sauce
- 1 teaspoon sesame seeds
Directions
- Mix sesame oil, vinegar, soy sauce and lime juice and set aside to let flavors mingle.
- Chop chicken, carrots, and spring onion.
- Mix all ingredients and place on bread or mixed greens.
- Garnish with sesame seeds

I did not make any changes to this recipe. Hubby and I thought it was great! Quick and easy and very filling. I used the packaged grilled chicken stips, which made it very quick to make. You get a whole days worth of veggies in a tasty salad! –
