Life has been on a tight budget this week, but that is alright it means that I will be more creative. I had to fight the boys for some of this cucumber as for some reason I only bought one!
The boys have really started enjoying vegetables I really need to start stocking up more. I’m very excited that they are past the super picky stage and are starting to try new things. But also we have been able to figure out things that they will always eat when asked to. Cucumbers, lettuce leaves, carrots, and spinach will need to be added to every grocery shopping trip!
This was such a great light dinner, I served this with apple slices and a few crackers. But I may have to try and make it for the next time we go to a potluck. It was so easy but fun and delicious.
Easy Tuna Sriracha Bites
Serves: 1
Ingredients
- 3 ounces tuna
- 1 tablespoon light mayonnaise
- salt & pepper to taste
- 1 dash dill weed
- 10 slices cucumber
- 2 tablespoons sriracha
Directions
- Mix tuna with light mayo, salt & pepper and dill weed
- Spoon tuna mixture onto cucumber slices
- Drizzle sriracha on top of each slice
