My kids love eggs and the love noodles. Years ago I saw a recipe for Egg Fu Yung that used Top Ramen noodles. Top Ramen is one of TJ’s favorite staples to have in the house and eggs are one of my favorite staples to have in the house. This recipe became one of my kids favorite recipes and we still have it every so often as a treat.

Egg Fu Yum
Serves: 2
Ingredients
- 1 package ramen noodles
- 2 eggs
- 2 tablespoon butter
- 1 tablespoon soy sauce
Directions
- Cook the ramen noodles according to the directions
- Mix eggs, 1/2 the seasoning packet, and soy sauce
- Heat pan on medium heat and melt butter
- Drain the noodles and carefully lay the noodles in the pan very close together
- Do not move the noodles while they cook for 3 minutes
- After the 3 minutes add egg mixture to the center of the noodles and carefully spread out throughout the patty if needed
- Cook for another 2-3 minutes or till the egg starts to set
- After egg has started to set flip your patty
- Cook for another 2 minutes or till patty is cooked through

this does look fun! I make noodles with butter and throw in a veggie to make it look healthier lol. I have to try this for lunch looks great!
