It’s Frittata Friday and today this recipe goes hand in hand with my Zucchini Black Bean Salad. I took this salad to a barbecue but still ended up bringing some home, but that was perfect because it became my newest Frittata. This is another example of Leftovers Frittata, but slightly different. This shows you no matter what you have left over in your fridge it will be great for a frittata the next day and will be a completely new twist on whatever it was!
Zucchini Salad Frittatas
Ingredients
- 1 serving zucchini black bean salad
- 2 eggs
- 2 tablespoons parmesan cheese
Directions
- Preheat broiler
- Mix together cheese, egg, and zucchini salad (reserve a pinch of parmesan to sprinkle on top)
- Spray small oven safe pan with non-stick spray pour in mixture
- Cook on stove till set – about 3-5 minutes
- Place in broiler for 3-5 minutes or till top is browned and cooked through
- Sprinkle the parmesan ontop and place back under broiler for a few seconds to melt.

Loved this recipe! Living in India, I had some difficulties finding rocket and zucchini so substituted 3 small-medium tomatoes instead and the result was wonderful.
I have made this recipe many times without the frittata pan and just put it in the oven for a few minutes to firm it up after the bottom browns in the saucepan. I served this with roasted potatoes and fruit. Our guests loved it!
I’m being on a diet to lose weight, but tbh I couldn’t resist it when seeing this delicious food!!! It’s your fault posting this post if I gain weight again :))
I just prepared it this morning…man its delecious but i had a trouble finding the parmesan cheese so i replaced it with mozzarella cheese. the results was great! quodos to you Pepper!
I also find it great for weight gain since i am trying to put on some kgs.
