I’ve been craving macaroni and cheese, yes it’s terrible for you, but I had to have it. I decided let’s try and make a healthier, high protein version of this treat. I also wanted to make it easier to portion control so I chose to make them in a mini muffin tin.

Healthy Baked Macaroni & Cheese Bites
Ingredients
- 1 box macaroni and cheese
- 1/2 cup cottage cheese low fat
- 1/4 cup plain greek yogurt
- 1/4 cup sharp cheddar cheese
- 1/4 cup tomato chopped (optional)
Directions
- Preheat broiler and place rack on top slot
- Follow directions on the box for cooking macaroni noodles
- Add cottage cheese, yogurt, and cheese packet to noodles and mix
- Spoon 1 cup of noodles into 6 cups at a time ( you may have some left over or have to do a small second batch)
- Sprinkle cheese on top and tomatoes if you wish
- Place on top rack and cook for 3-5 minutes or till tops get crispy

It IS cute! That is great that you are trying to make mac and cheese healthier 🙂 They have this whole grain pasta on the market now that tastes good… And, I think the tomatoes were a good addition!
I love mac n cheese too 🙂 I love the portion control, even though the cups didn;t work well! So very cute! I recently was out and sampled mac n cheese fritters, which they deep fry – so bad for you, but tasted so good 🙂 I’ll have to try yours at home, It looks good for me and my kids 🙂 Thanks for sharing!
