Healthy Candy Corn Popsicles

Handi Foil sent me some great recyclable foil pans and paid for me to create some great recipes for them and for you!

With Halloween coming the sugar is coming too. You can still offer your kids some great fun treats that are not sugar packed! And if your kids are like mine they will never know the difference!

I split my container of yogurt into thirds – vanilla, orange, and lemon. You will want to add your first layer, the vanilla and then freeze for at least one hour.

One trick I learned was on your first layer, the vanilla layer make sure you freeze it really well before placing the orange layer and the popsicle sticks in. This way your popsicle won’t slide down your stick, the vanilla will hold it on. If you can freeze the vanilla over night this will really help. Then you can add the orange layer and freeze for just an hour.

Because I couldn’t find sugar free lemon Jello I ended up picking the sugar free lemon pudding instead. The pudding does think as you stir it into the yogurt. Actually this was the best layer! It was like lemon custard!

Once the last layer is frozen you can just pop it out of the tin. This is one of the awesome reasons to use Handi Foil’s muffin tins, because they are malleable you can just pop the popsicles right out!

The boys loved these and they had no idea they were healthy!

Healthy Candy Corn Popsicles

Serves: 12

Ingredients

  • 1 container (32 ounces) vanilla greek yogurt
  • 2 tablespoons sugar free orange jello mix
  • 1 package sugar free lemon pudding mix
  • 12 popsicle sticks
  • 2 foil muffin tins

Directions

  1. Split yogurt into 3 containers
  2. Add sugar free orange mix to one container and mix thoroughly
  3. Add sugar free lemon pudding to the next container, mix thoroughly, this mixture will thicken
  4. Layer a couple tablespoons of vanilla yogurt on the bottom of each muffin tin
  5. Freeze for at least one hour (though overnight is best for this layer)
  6. Layer orange mixture on top of the frozen vanilla and stick in the popsicle stick
  7. You can use tin foil or press and seal plastic to hold the popsicle sticks in place
  8. Freeze for at least one hour
  9. Layer lemon mixture on top of the orange layer, you will have to spoon it around the popsicle stick
  10. Freeze for at least one hour
  11. To remove the popsicles just push on the bottom of the foil muffin tin and it will pop right out
