Time for a little honesty, I’m having a hard time cooking. I’m just frustrated with food and our odd family schedule. I’m trying to keep things simple, but that doesn’t make for awesome blog posts. But then I imagine that you too have days where you just want to keep things simple.
Instead of doing a full menu plan and grocery shop I made a point of picking up staples and fruit and veggies. I don’t do a lot of avocado in my diet as it is high in calories. But I really need up my healthy fat intake, which in turn ups my calories.
One thing I’ve been wanting to create is a creamy dressing to add to my menu. I am missing ranch and blue cheese dressings sometimes, so I decided to make something easy and healthy.
You could actually use any of your favorite spices in this recipe or whatever you have available. That’s one thing that makes this recipe simple. Two main ingredients and then a touch of spice from your cupboards.
Simple Avocado Dressing
Serves: 2
Ingredients
- 1/2 small avocado
- 1/4 cup plain greek yogurt
- dash cumin
- dash garlic powder
- salt & pepper to taste
Directions
- Mash avocado with fork
- Add greek yogurt and blend till smooth
- Add spices and blend

I go through phases when I don’t know what to cook as well. Keeping things simple really helps but there are some days when I don’t even want to do that! lol.
