I injured my wrist last week and I was taken off my computer and cooking. Some ways I enjoyed the time, spending more time with my boys. But other ways it was incredibly hard. This simple salad is one of my no cooking creations that I made while off cooking.
The watermelon was already cut, all I had to do was add in the wonderful fresh ingredients. But even trying to photograph my creation was painful and hard (you can see that in my main photo). You don’t realize how much you use your hands until you can’t.
So I can highly recommend this recipe for those moments where you don’t (or can’t) cook. Add some precooked chicken to your dish and enjoy a light healthy fresh meal.
Watermelon Cilantro Salad
Serves: 1
Ingredients
- 2 cups watermelon cubed
- 1/2 ounce goat cheese
- 1 teaspoon fresh cilantro chopped
Directions
- Layer watermelon, goat cheese and cilantro
- Toss if you wish
