You may have seen the great photos of tomato used as bowls or stuffed tomatoes, but personally as lovely as the look they are hard to eat unless you want to eat the filling out then the tomato. That’s why I decided to create tomato boats!
Tomato Boats
Ingredients
- 2 tomatoes
- 1/2 cup cottage cheese lowfat
- 1/4 cup radishes chopped
- 1/4 cup cucumbers chopped
- 1 clove garlic
- 1/4 teaspoon homemade ranch mix
- salt and pepper to taste
Directions
Cut tomatoes into quarters and scoop out
Mix cottage cheese, radishes, cucumbers, garlic, and ranch mix together
Salt and pepper tomato boats
Scoop mix into tomatoes

That is one simple dish! The best part is that it is very healthy and it will go well with a lot of other dishes.
