Bread is evil – okay bread isn’t really evil. But eating two slices on a sandwich are going to give you a pretty high calorie, high carb meal. But you do have a few options. You could do an open faced sandwich Open Faced Crab Melt or forget the bread all together like in my Cucumber Ham Wraps or you can find an alternative to bread to use.
I have used cucumbers, zucchini, but I think I may have found a new favorite may be cabbage. The leaves have a light and simple flavor to them, so they don’t overwhelm the flavors of the sandwich filling. On top of that they hold the sandwich together great.
I was going to try and make these in wraps but my leaves just wouldn’t let go easily. So instead I just put it together like a sandwich and it turned out perfect!
Cabbage & Turkey “Sandwich”
Ingredients
- 2-4 leaf cabbage
- 4 ounces turkey deli meat
- 1 slice tomato
- 2 slices center cut bacon
- 1 tablespoon light mayonnaise
Directions
- Lay down 1-2 leafs of cabbage
- Layer with turkey, mayo, tomato and bacon
- Top with 1-2 more cabbage leafs
