It’s frittata friday again! I have to say this is one of my favorites. I loved how the artichoke heart texture mixed in so well with the eggs. I wish though that I had a more elegant cheese to use with the artichoke. But then again frittatas are all about using what you have on hand. And I have a lot of cheddar on hand.
Artichoke Frittata
Ingredients
- 1/4 cup artichoke hearts in water
- 1/4 cup shredded cheddar cheese
- 2 eggs
- salt and pepper to taste
Directions
- Preheat broiler, make sure shelf is in top slot
- Spray oven safe skillet with olive oil cooking spray
- Chop artichokes hearts finely
- Mix eggs, artichoke hearts, cheese (reserve a tablespoon to sprinkle on top), salt and pepper to taste
- Pour egg mixture
- Cook for about 2-3 minutes or until egg starts to set
- Take pan and place on top rack in broiler
- Broil till brown on top and cooked through, about 2 minutes
- Pull out and sprinkle with reserved cheese and broil for 1 more minute
