The heat has arrived and I do not want to be working over a warm stove or oven. I have a few great crock pot recipes, but when I’m mainly cooking for myself that doesn’t work. My go to these hot days are salads. I made this amazing Strawberry Goat Cheese Salad and to top it off I create a Skinny Creamy Black Pepper Dressing that is amazing.
I just received The Flavor Bible (affiliate link) as a gift for my birthday. I am so excited to learn more about how flavors work together as I learn more about cooking. One flavor that I have been curious about is strawberries and black pepper. I used this book to create this new recipe, you have to try it and let me know what you think of the flavor combination.
I used vinegar and milk to create a buttermilk like base for this dressing. If you have buttermilk in your refrigerator you can use that as well.
Strawberry Goat Cheese Salad
Serves: 1
Ingredients
- 2 cups Romaine Hearts, rinsed and dried chopped
- 4 strawberries medium
- 1 ounce goat cheese
- 2 tablespoon skinny creamy black pepper dressing
- cracked black pepper
Directions
- Slice or dice strawberries
- Layer sliced strawberries on a bed of romaine lettuce
- Crumble goat cheese over strawberries
- Drizzle with dressing and sprinkle a dash of cracked black pepper on top

Skinny Creamy Black Pepper Dressing
Serves: 10
Ingredients
- 1/4 cup milk
- 1 tablespoon vinegar
- 1 cup nonfat plain greek yogurt
- 1 teaspoon cracked black pepper
- 1 dash onion powder
Directions
- Add vinegar to milk and let sit for about a minute
- Add greek yogurt and seasonings mixing till smooth
- Let sit in fridge for about an hour before serving
